El Indio is back on our single-origin lineup, this time roasted for filter! This natural lot from Tolima went down a storm in 2024. It’s rich, fruity and unforgettable, so it was only right we brought it back as a filter roast. Tolima is one of Colombia’s most celebrated coffee regions, with a track record of Cup of Excellence awards and standout entries in the Colombian Coffee Federation competitions. El Indio is a collective effort, produced by a group of dedicated growers who follow strict quality protocols to keep standards sky high, and boy, does this shine through in every cup! After harvest, the coffee cherries are spread on raised beds or patios to dry under the sun. As they slowly ferment, the sugars break down and start to ferment, giving the cup its vibrant natural character, think strawberry and apple in every sip. The farmers of El Indio aren’t just growing coffee, they’re raising the reputation of their region, and sharing something truly special with us with every batch
