The beans are grown at an altitude of 1500m in volcanic ash soils, resulting in floral aromatics, juicy brightness, and a jammy texture. The coffee undergoes a 30-hour underwater fermentation process at Cofinet’s La Pradera processing center, followed by sun-drying for 12 days on raised beds in greenhouses. This meticulous process ensures a clean, structured cup with refined acidity and sustainable water use through Cofinet’s green filtration system.
