Grown by Jairo Arcila at Finca Santa Mónica in Quindío, Colombia, this washed Pink Bourbon coffee offers taste notes of Blackcurrant, Parma Violet, and Molasses. The beans are grown at an altitude of 1500m in volcanic ash soils, resulting in floral aromatics, juicy brightness, and a jammy texture. The coffee undergoes a 30-hour underwater fermentation process at Cofinet’s La Pradera processing center, followed by sun-drying for 12 days on raised beds in greenhouses. This meticulous process ensures a clean, structured cup with refined acidity and sustainable water use through Cofinet’s green filtration system.
