This lot was fermented for 72 hours, in two stages - first in the whole cherry and the second once it was depulped. The impact of this long fermentation process is super juicy tropical fruits and complex floral notes in the cup. After a two-stage wash where the last remaining bits of mucilage are removed, a final 15-day resting period in a cool, dark environment allows the profile to fully settle. The result is a clean cup with subtle florals, layered sweetness, and a creamy mouthfeel. Recommended brewing: Pour Over
