Colombia – Hachi Saikō Geisha is a unique coffee produced by the Hachi Project, founded by Diego Bermudez and Allan Hartmann. It is part of a research initiative focused on maximizing the genetic expression and flavor potential of coffee plants. The Hachi Inverted Process used in production involves whole-cherry fermentation before de-pulping, resulting in a cup with refined fruit clarity, clean acidity, and integrated structure. The project spans five farms across Colombia and Panama, aiming for unique flavor profiles and complexity.
