It is part of a research initiative focused on maximizing the genetic expression and flavor potential of coffee plants. The Hachi Inverted Process used in production involves whole-cherry fermentation before de-pulping, resulting in a cup with refined fruit clarity, clean acidity, and integrated structure. The project spans five farms across Colombia and Panama, aiming for unique flavor profiles and complexity. This coffee represents the pinnacle of innovation in coffee production, showcasing exceptional quality and precision in processing.
